Happy Spring

We hope that everyone is having a wonderful and warm spring.

The almost 3 year old (only 2 more days!) has been sleeping through the night for 2 straight weeks now. Once he got over the T&A surgery, and the ear infections (both ears), a bout of the stomach flu, a potential allergy to penicillin and a stubborn cold, it only took 2 nights and a kiddie alarm clock to get Alex to sleep through the night, every night until 6am.   Kids who sleep through the night ROCK!

Alex had a fun Easter egg hunt at school just before the holiday. Michael was able to attend and cheer him on – and he did a great job finding and collecting more eggs than his other classmates. He even sat down to organize his collection following the hunt:

The Saturday before Easter, the boys and I baked a frosted some delicious spring-themed cookies (thank you Martha Stewart).  I don’t really get the whole dying of eggs activity, and I think this was a great success so be prepared to frost some cookies if you visit us for Easter next year.

    

On Easter morning, Alex woke up to a trail of plastic eggs leading him to the backyard where the Easter bunny had delivered a bountiful Easter basket. Little did we know that Alex would want to stop at each egg and devour its contents (goldfish crackers) before moving on to the next egg. Our little egg trail took us about 20 minutes to reach the back door. What a silly methodical monkey.

We also were able to celebrate Easter with Uncle J, Aunt Tonya and Cousin Kayleb at their home. Tonya made a delicious and decadent brunch and we worked off the calories by swimming in the pool. The weather was perfect and Alex learned how to blow bubbles underwater, which he has been practicing in the tub ever since. Do I see swim lessons in the near future??? :)

Christmas Tamales

As is yet another food tradition in the Michael and Tracy household, we made our famous Christmas Tamales yesterday.  Is your mouth watering just thinking about how delicious they are??  :) Mine is.

We made a total of 5 dozen all pork tamales.  We decided to skip the veggie/chile variety this year as we end up with more tamales than we can store.  If you are in our neighborhood and need a tamale fix, feel free to stop by and take a few for the road…

Son of the Sandwich Slug

As I already was planning to post about our another food tradition (Tamales) today, it seems like an appropriate time to continue the Sandwich Slug saga…

Because last year’s Halloween sandwich treat was such a success, we decided to make the Snake Bites recipe again this Halloween.

As the original Sandwich Slug was devoured in last year’s Halloween showdown, we made and ate the Son of the Sandwich Slug this year.

We modified the ingredients just a bit to accommodate Tracy’s pregnancy boycott of lunch meat. We do not recommend deviating so drastically from the recipe in the future. The original Sandwich Slug was much tastier and baked more evenly than his recipe-abandoning son.

As you can see in the photo below Son of the Sandwich Slug was oozing upon completion of baking.

There was not much of an attack this year given the slug’s oozing condition, but here a couple of photos of us with the slug.

And now for a totally non-pregnancy, but very curious topic…

Last year, for Halloween 2006, as we had extra vacation days to spare, we took the day off of work and had ourselves a little party complete with scary movies and halloween-themed food and drink.

One of the dishes that we prepared was this Snake Bites recipe from the Food Network. However, due to a lack of understanding of a step or 2, our Snake came out looking more like a Slug. And so began the legend of the Sandwich Slug….

And as it was intended to be “scary food”, we took a couple of shots of us clearly frightened of the Sandwich Slug. I mean, look at the Slug, it is SO scary! Our lives are clearly in danger in the pics below. :)

Luckily we were able to escape the Slug’s deathly grip and we ate him. He was delicious! We washed him down with a few rounds of Beer Margaritas, or Beergaritas as I like to call them, while watching our horror flicks.

It was a fun and tasty Halloween treat!
